Fall is in the Air

Did the weather change overnight for you like it did for us here on the West Coast? After last year’s long and dreary winter, I refused to complain an ounce about the heat but I must admit that it did feel great to cuddle up on the couch with a blanket and to wear my trusty leather boots over the weekend! Its always amazing to me how quickly our lush mountains ease into their autumn colours of rust, deep red and golden yellow but their mottled hues look so gorgeous in the September sunshine. Not just for the hills, these colours look just as beautiful in the home…or on the table for that matter!

Now that I’m a working mama (at least part of the time), it’s time to pull out the crock pot and start thinking ahead for some healthy, hearty suppers. I’ve become a big fan of soup but have yet to win my family over. Any tried and true Fall recipes that you’re willing to share? My hubby hinted that I may have gone overboard on the pumpkin last year so I’ll have to ease into it a bit more stealthily this time ’round :)

Lovely round up! Ha, I am right there with you going overboard with pumpkin. Chili is always a quick and easy go to for me on cooler days. I brown some ground turkey in a pot, add one can of tomato sauce, one can of diced tomatoes (fire roasted are the best), one can of kidney beans and a packet of chili seasoning. Top with some avocado and cheese. Its sooo easy and its my hubby’s fave!

I just said this morning how chilly the bedroom was compared to just a few days ago – time to close the window a bit more… And when I looked out the window mentioned to my husband how the leaves seem to be turning colour before our very eyes. I live fall and just wore my boots and a sweater for the first time on Friday night! …Baked spaghetti is a great make-ahead dish. You can make it, freeze it, and just have to reheat it when you don’t have time to prep :-)

Haha, we girls are so funny! I did my “I get to wear boots” dance on Saturday! Definitely my favourite time of year. For quick dinners I love veggie quesadillas or Hunan Kung Pao which is so much easier to make than you’d think!

Fall has not quite made its appearance in the Okanagan yet although I’m anxiously awaiting it. I love making soup in the fall/winter so my family is forced to endure. With 2 vegetarians and 2 carnivores I find that soup is the one food we can all agree on:)

Thanks for the Pillow Love Lily! I’m all over the boots and now thanks to Pinecone Camp I’ll be having soup and grilled cheese for dinner tomorrow. Can’t wait to visit Vancouver this weekend. BEST time of year in Van!
